Ingredients
For the crust
200 g of digestive biscuits
100 g of melted butter
For the filling
400 g of cream cheese
200 ml of heavy cream
150 g of sugar
1 cup of passion fruit pulp
2 packets of unflavored gelatin
4 tablespoons of water
For the topping
½ cup of passion fruit pulp
3 tablespoons of sugar
Preparation
Start by crushing the biscuits until you get a texture similar to fine sand. Mix with the melted butter until a uniform paste forms.
Press this mixture into the base of a springform pan to form the cheesecake crust. Refrigerate for 20 minutes to set.
In a large bowl, mix the cream cheese with the sugar until you achieve a smooth and creamy texture. Then add the heavy cream and continue beating until fully incorporated.
Add the passion fruit pulp and gently mix to maintain the fresh flavor of the fruit.
Hydrate the unflavored gelatin with water for a few minutes and then heat it slightly until it dissolves. Incorporate it into the previous mixture while slowly whisking.
Pour the mixture over the cookie base and refrigerate for at least four hours until the cheesecake is firm.
For the topping, cook the passion fruit pulp with the sugar for a few minutes until it thickens slightly. Let it cool and pour over the cheesecake before serving.
