The mango is not only used in desserts or juices. In modern cuisine, it is also used to create sauces that accompany white meats and fish. Chicken in mango sauce is a recipe that combines sweet and savory, resulting in a balanced and flavorful dish.
These types of preparations have become popular in international cuisine due to their tropical profile and versatility.
Ingredients
2 chicken breasts
2 ripe mangoes
1 small onion
2 cloves of garlic
1 cup of chicken broth
2 tablespoons of honey
1 tablespoon of lemon juice
2 tablespoons of olive oil
Salt and pepper to taste
Preparation
Start by seasoning the chicken breasts with salt and pepper. In a large skillet, heat the olive oil and brown the chicken on both sides until well sealed. Remove and set aside.
In the same skillet, sauté the finely chopped onion along with the garlic for a few minutes until fragrant.
Peel the mangoes and cut them into pieces. Place them in the blender with the chicken broth, honey, and lemon juice. Blend until you obtain a smooth sauce.
Pour this mixture into the skillet with the onion and cook for a few minutes until the sauce begins to thicken.
Return the chicken to the skillet and let it cook over medium heat for about 10 minutes to absorb the flavors of the sauce.
Serve accompanied by white rice or sautéed vegetables.
