Pineapple is a fruit widely used in baking due to its natural sweetness and juicy texture. Caramelized pineapple cake is a classic of homemade cooking that highlights the tropical flavor of this fruit.
This recipe is ideal for family gatherings, celebrations, or to accompany a cup of coffee.
Ingredients
1 ripe pineapple
200 g of sugar
3 eggs
200 g of wheat flour
120 g of butter
1 cup of milk
1 teaspoon of baking powder
1 teaspoon of vanilla extract
Preparation
Start by peeling the pineapple and cutting it into slices. In a cake pan, melt 100 g of sugar over low heat until it forms a golden caramel.
Place the pineapple slices on top of the caramel, forming an even layer at the bottom of the pan.
In a bowl, beat the butter with the remaining sugar until you get a creamy mixture. Add the eggs one by one while continuing to beat.
Incorporate the vanilla and mix well.
In another bowl, mix the flour with the baking powder. Add these dry ingredients to the previous mixture, alternating with the milk until you obtain a homogeneous batter.
Pour the mixture over the pineapple slices and bake in a preheated oven at 180 °C for about 40 minutes.
Once ready, let it rest for a few minutes and unmold by flipping the cake so that the caramelized pineapple is on top.
The result is a moist, aromatic cake with a tropical flavor that highlights the richness of Colombian fruits.
